As it is a Pancake day today I thought I would share some of my favourite healthy pancakes recipes. These pancakes contain no sugar, no flour, no dairy, but pack a protein punch and are full of flavour.
Combinations are endless and you can experiment with adding spices such as: cinnamon, nutmeg, ginger or cumin or a bit of vanilla extract.
2 ingredients pancake
one banana
one egg
3 ingredients pancake
one banana
one egg
half of shredded apple
4 ingredients pancake
one banana
one egg
half of shredded apple
half of shredded carrot
All you need to do is mix together an egg and banana until smooth (I use my Ninja Bullet), mix it with shredded apple or carrot or both and voila – its ready!
Heat non-stick frying pan with a bit of coconut oil to medium heat, pour batter onto pan and cook on each side until golden. Simply double or triple the ingredients if you are cooking for more than two people.
