Any chocolate lovers here??? Birthday celebration without chocolate cake is simply impossible. Enjoy this yummy, healthier alternative to shop bought cake. No cooking skills required!
It is vegan, flour-free, grain-free and super creamy. Simply delicious!
Crust:
1 cup of dates (soak in hot water for 20 min)
1 cup of desiccated coconut
Chocolate cream:
3 bars of good quality dark chocolate (300 grams). I used Green & Blacks organic 85% cocoa chocolate)
1 can of good quality full fat coconut milk
To make the crust: In a food processor blitz crust ingredients (discharge the water from dates). Spoon the mixture onto the cake dish. Place the dish in the freezer while you are preparing the chocolate cream (20-30minutes).
To make the filling: Melt the chocolate bars over the lowest heat setting, pour the whole can of coconut milk into your melted chocolate and whisk until smooth. Pour the chocolate filling into the cake dish. Put the dish in the freezer for 3h.
Remove from the freezer, and lift the cake out of the dish (I use round cake dish with removable sides, run the knife around the sides and push it out very carefully).
Garnish with toasted coconut flakes or berries. Keep it in the fridge. Enjoy!
