Healthy muffins

Diet high in refined carbohydrates such as sugar may have negative impact on your fertility. I will tell you more about it in my next post.

For now I have a great  breakfast or snack idea for you (this recipe comes from www.superhealthykids.com). These muffins are made with nutritious and healthy ingredients. No sugar or any kind of sweetener needed! One banana does the job:). My one year old (and his dad) think they are yummy so I spend quite a lot of time making them.

Ingredients:

1.5 cup oats

0.5 cup natural yogurt

0.5 cup almond or oat milk

1 banana

1 egg

1 teaspoon cinnamon

1 teaspoon vanilla extract

1 teaspoon baking powder

Handful of frozen mixed berries or any fruit of your choice (optional)

Method:

Pre-heat the oven to 180 C.

Mash the banana with fork.  Add an egg and whisk together. Add all the remaining ingredients and mix well. Grease the muffin tray. Pour the mixture in and bake for 30 minutes. Enjoy warm or cold.
