Healthy Thai Soup

Looking for a yummy, quick and healthy soup to kick-start your new year and new you? This recipe is full of flavour, veg, warming spices and healthy fats. For those in pre-conception period or pregnant, folate, present in broccoli, has been linked with reduced risk of spina bifida in babies. Ginger has been studied to be beneficial in alleviating morning sickness.

Ingredients:

1 veg stock cube

1 butternut squash (neck only)

2 cloves of garlic

1 thumb sized piece of ginger

1 fresh red chilli

1 tsp turmeric

1/2 bunch of spring onions

4 dried kaffir lime leaves

1/2 bunch of fresh coriander

1 tbsp of each: sesame oil, soy sauce and fish sauce

handful of broccoli and green peas or aspargus

300g rice noodles

1 tin of coconut milk

Methods:

Boil 800ml water and crumble the stock cube, grate the neck of the squash and add to the stock (you dont have to peel it). In the food processor blitz garlic, ginger, chilli, turmeric, spring onions, kaffir lime leaves, coriander, sesame oil, fish sauce, soy sauce. Blitz to paste, add to the stock.  Add brocolli and peas (you can use any other veg you like), add noddles. Pour coconut milk. Cook until noddles and veg are cooked. Squeeze over the juice of 1 lime before serving. Enjoy!
