Oaty Cacao Bites

Great snack to satisfy your craving for something sweet. It contains low GI carbs (oats), which means no extreme high and low spikes in your blood sugar, healthy fats and protein and some natural sugars.

Choose just one of the following nut butters, dependent on your needs for this delicious recipe:

  • Peanut butter: it is a good source of protein and has high folic acid content (useful in pregnancy to reduce the risk of neural tube defects).
  • Almond butter: is the lowest in calories and the highest in protein and calcium.
  • Cashew nut butter: is sweeter than other nut butters and is highest in zinc, cooper and iron.

Buy one that has no added sugar or palm oil- Meridian brand is my fav!

Ingredients:

1 cup oats

1 cup whole almonds

4 table spoons nut butter

2 tablespoons cacao powder

1 table spoon coconut oil

Pinch of Himalayan salt

6 dates – soak in hot water for 10 minutes if they are very dry

Method:

Blitz oats and almonds in food processor for a couple of minutes. Add the nut butter, cacao powder, coconut oil, dates and salt. Blend until all is mixed well. The recipe mixture was too dry to roll small balls so I added some water, just add as much as you need to do make it a bit sticky so you can roll the mixture into small balls. Sprinkle with cacao powder, you can freeze until ready to use or keep them in the fridge.

They do taste much better the day after making….However the hardest part is to resist the temptation to immediately eat them all!
