Raw cauliflower salad

Cauliflower belongs to the cruciferous family (which also includes broccoli, cabbage and brussel sprouts). These vegetables are rich in glucosinolates which activate phase 2 of detoxification in your liver, helping your body to filter out estrogen metabolites. It also contains a powerful nutrient called DIM, that can also improve metabolism of your estrogen.

Good old cauliflower is also beneficial during pregnancy thanks to its folate content, which helps prevent spina bifida. Choline is also present in cauliflower which may also help in this regard.

vitamin C – 43mg

Potassium – 380mg

Phosphorus – 64mg

Folate – 66mcg

as well as smaller amounts of calcium and magnesium.

Drug Interaction:

If you are taking anticoagulant medicacion such as Warfarin, foods rich in vitamin K may decrease the effectiveness of the drug as your body uses vitamin K for blood clotting.

Ever thought of eating cauliflower raw? Here is a simply delicious recipe for a raw cauliflower salad that wont fail to impress

Ingredients:

Small Cauliflower

1 tin/carton chickpeas (drained)

Pinch chili powder, salt and pepper

1 crisp apple (chopped)

1 shallot (chopped)

Parsley and mint fresh (handful) (finely chopped)

1 Avocado (sliced)

Dressing:

2 tbsp grainy mustard

2 tbsp honey (if you are vegan use plant based sweetener of your choice such a agave syrup, molasses)

¼ cup olive oil

¼ cup water

Juice and zest of lime

Salt and pepper

Method:

Run cauliflower in the food processor until it resembles rice. It should take 2-3 minutes. Transfer to a big salad blow and add all the other salad ingredients. In a small bowl whisk together dressing ingredients, pour over your salad and mix well.
