Sweet potato and courgette brownies

Believe me it tastes better than it sounds.

Not a fan of veg? Pack them into your cake! Yes, you heard me cake… Make these delicious brownies with very little effort on your part. For a sweeter taste just add more dates. This is a healthy alternative to regular a brownie…just don`t eat the whole thing at once!

They are great to curb those sugar cravings whether you are pregnant, trying to conceive or just would like to eat a healthy and balanced diet.

Sweet potatoes are good source of vitamin A, C and potassium. Courgettes provide a moderate amount of folate, which is very important in pregnancy.  It is also rich in vitamin C, high in fiber and water but low in calories, so perfect for your waistline.

Ingredients:

600 grams of sweet potatoes

2/3 cup of ground almonds (80g)

½ cup of coconut flour

20 dates, or more if you prefer it sweeter (soak in boiling water for 20 min)

4 table spoons of cacao powder, or more if you prefer stronger chocolate flavour

Half of grated courgette

Method:

Pre-heat the oven to 180 degrees. Peel potatoes, cut in chunks and steam until soft, once cooked add them to food processor, or use hand blender together with dates (discharge the water) and process until smooth.

Add the mixture to your dry ingredients and mix well. Fold in the grated courgette. Transfer the mixture to a baking tray (I use 20 x 20cm size) and bake for 20 min. Allow it to cool for 20 min – this is very important as it needs this time to stick together. Remove the brownie from the tray, leaving it another few minutes before cutting it into squares – for optional topping melt some dark chocolate and drizzle over your cake – enjoy!
