Sweet potato muffins
Are you pregnant and crave sugar all the time, even for breakfast? Swap it for sweet potatoes.
Sweet potatoes for breakfast? Why not? Especially if they come in a form of yummy cakes. Simply delicious and nutritious.
Why are sweet potatoes good for pregnancy?
- Fiber – it can help you relieve constipation, which is very common in pregnancy
- Vitamin 6 – it can help you with morning sickness
- Iron and Vitamin C – perfect combo as iron is better absorbed when consumed with vitamin C. Iron deficiency is very common during pregnancy as your body produces more blood (iron is used to produce red blood cells) to support your growing baby
- Caretonoids – more precisely beta-corotene which is vit A precursor. It is important for your baby`s nervous, respiratory system development, as well as eyes, heart, lungs and kidneys. It is important not to get too much retinol form of vitamin A when pregnant (as it can be toxic to your baby). Retinol is present in animal flesh and some supplements, so you are safe with sweet potatoes!
- Potassium – it can help you with muscle cramps and tiredness. It also helps to maintain healthy blood pressure
- Magnesium – it can help to avoid premature contractions, it relaxes your muscles. If you suffer from stress or insomnia it might help to alleviate those symptoms too.
Ingredients:
1 medium sweet potato, baked and mashed (approx 190 grams)
2 eggs
1 large banana
2/3 cup almond butter
spices: 1.5 tsp cinnamon, pinch of nutmeg, 1/2 tsp all spice
2 tsp baking powder
Method:
Pre-heat oven to 180 degress, grease muffin tin (I use coconut oil). Put all the ingredients in the blender and blend until smooth. Pour the mixture into muffin tin and bake for approx 20 minutes.
